"One of the most aggravating iatrogenic (doctor caused) food fads nowadays is skipping eggs for fear of cholesterol. Actually the egg white is loaded with lecithin, a substance that breaks cholesterol cells into teeny particles that can pass easily through the walls of the blood vessels without clogging them. Perhaps cholesterol is a dietary problem - but not from the egg, since the lecithin comes already built in for you as long as you don't just eat the yolks.
Eggs are cheap, compared to other sources of protein. They pack a goodly amount of protein in a yummy package that can be served in many different ways: soufleed, scrambled, fried, in omelettes, boiled for a snack, chopped into sandwiches or salads, and added to lots of foods you happen to be cooking, just for the extra protein.
Beyond protein, the egg is similar to milk in that this tiny oval wonder has so many of the other vitamins and elements you need for good health. You would have to munch your way through quiet a variety of items to touch as many of the nutrients as come together in the egg..."
